The aromatic smells of sweet crab, tandoori chicken and curry permeated The Altman Building while an infusion of modern hip-hop and classic Indian beats played during The First Annual Varli Food Festival on Thursday April 7, 2011 in New York City. Varli Singh, the founder of VARLI Magazine and the creator of this first-of-its kind Varli Food Festival pay homage to the fine offerings of Indian cuisine and culture. Throughout the elegantly designed sold-out event, guests indulged in fine wines, Tequila Avion, and dishes from over 35 of the finest Indian restaurants including: Tamarind, Devi, Junoon, Tulsi and Chola. As the guests mingled and danced, famous Indian chefs including: Sanjeev Kapoor, Survir Saran, Floyd Cardoz formerly of Tabla, Jehangir Mehta of Graffiti, Vikas Khanna of Junoon, Hemant Mathur of Tulsi, Maneet Chauhan of “The Next Iron Chef”, Hari Nayak, Prasad Chirnomula of Thali restaurants, Pankaj Bhadouria winner of Master Chef India Radhicka Agarwaal runner-up of Master Chef India, and Mel Oza of Lehja restaurant discussed the distinct flavors and tradition of Indian cooking. Among the delicious Indian fare was the artistry and keen eye for detail each chef displayed at their stations; melons were carved into elaborate flowers and cakes were hand painted with henna designs. Displaying first-hand the unique art of Indian cooking, Sanjeev Kapoor captivated guests in an on-stage cooking show during which he also answered questions from the audience.

Guests flooded downstairs to the spice market to fill their bags with complimentary Indian spices and herbs, so that they could aspire to be India’s next Top Chef. There was enough food for everyone and it wasn’t uncommon to see guests going back around for seconds of their favorite dishes. Later Tina Sugandh took the stage and got the crowd moving. Tina sang Indian chants while playing the tabla and then moved on to sing hip-hop songs while she infused Bollywood and Masala Bhangra style dance moves. After a night of delicious food and upbeat music, everyone left satisfied and excited for next year’s Varli Food Festival.

Watch out for Varli’s upcoming Dichku Ichku food festival for children! All proceeds from the series of festivals will go to charities helping less privileged children across the world.
