After much speculation—are they open, are they not?—the beloved Hamptons haunt, The Blue Parrot, will officially open this weekend. The Blue Parrot, that go-to “quirky, laid-back Tex-Mex bar and restaurant” in East Hampton will return to a town of delighted local residents, summer visitors, and A-listers including Martha Stewart, Rachel Zoe, Christie Brinkley, Alexa Ray Joel, and rumored silent investors Renée Zellweger and Jon Bon Jovi. While the ‘official’ date had been kept a secret the East End eatery will swing open its doors this weekend, easing into full operational mode. Having closed shop in 2006, Blue Parrot is back as the town’s favorite authentic dive bar, meeting place and local joint. The Blue Parrot brings together locals and summer visitors, offering a refreshing, casual and pretense-free atmosphere, with fun, eclectic music to match the original dining experience. In any attire, walk into this hole-in-the-wall locale and you are sure to spot just about anyone, as everyone is welcome.So far, the must-try favorites are the smoky Chipotle Guacamole (Hass avocado, tomato, onion, smoked chipotle chile, cilantro leaves & homemade tortilla chips, $12) and Meatballs al Chipotle (Tender meatballs – Albondigas – in a roasted tomato and chipotle chile sauce, chayote julienne & fresh cilantro. Served with white rice; $17).Other amazing fare includes The Blue Parrot Taquitos (Three soft taquitos with your choice of one of the following fillings: Chicken citrus marinade, onion, cilantro, salsa. Bistec roasted garlic, onion, cilantro, and salsa; or Shrimp Yucatan, roasted onions, sour orange; $14) and the Atun a la Parrilla (Grilled tuna steak, tequila, garlic & citrus marinade, avocado sauce served with sautéed spinach & rice; $26). The late night menu offers a range of delicious dishes, sure to satisfy nighttime guests who have few alternatives. The menu also features the Dirty Bird Margarita, a revival of the original made famous at the restaurant, served in a Mason jar on the rocks with an Old Time blend of Tequila and fresh juices; in addition to premium and super premium tequilas and Mexican beers. The Blue Parrot screens classic surfer films including The Endless Summer (1966), Big Wednesday (1978) and Ride the Wild Surf (1964), as well as spaghetti Westerns and sporting events.
